Hi nycvelo,
You'll need to add the cipher command yourself to the Advanced commands section (the text field under the Advanced tab when editing your connection in Viscosity). Add a command like so on a new line:
cipher AES-128-CBC

Hi dreamcat4, Viscosity is not capable of doing that by itself. You may be able to find some tricky firewall software that could pull it off.
